Features of Combi Ovens

The combi oven is a three-in-one oven that allows you to cook with steam, hot air (convection) or a combination of both.
Instead of buying two separate products such as a steam cooker and a convection oven, businesses can save both time and space with combi ovens, which are alternatives to these products and are not inferior to both products in food preparation.

Different Cooking Options:
An industrial kitchen combi oven allows you to choose between three different cooking options in one appliance:

  • Steam Cooking
  • Convection (dry heat) Cooking
  • Combination Cooking (mix of steam and convection)

Steam Cooking
For this option, this is accomplished by the steam generator located inside the combi oven. Thanks to this generator, very strong steam is created and steam is sent to the cooking cabinet. Ideal for cooking ingredients that can be boiled or steamed separately.
Combi steamers are especially best for cooking meat, chicken and fish. In traditional ovens, these products have a structure that can shrink and dry out and lose their weight after cooking. Thanks to steam cooking, the cooked product is more delicious, and the products are cooked with the most sensitive loss in weight. By steaming vegetables instead of boiling water, you can preserve their nutritional value and natural color more.

Convection Cooking
When this combi oven function is selected, dry heat is circulated around the oven, just as you may be familiar with your home oven at home.
This method is ideal for searing meat at the beginning of the baking or cooking process of any dish, including breads, pizzas and pastries.

Combination Cooking
This function uses both dry heat and steam together, ensuring the right humidity levels for the food you are cooking.
This means you can cook at higher, "more humid" temperatures in less time without the risk of burnt edges or shrinkage.

What to Cook in a Combi Oven?

Meat
During conventional roasting, a piece of meat can lose up to one-third of its weight, as all the natural moisture of the product dries up effectively. Having a gentle stream of steam in the oven minimizes shrinkage and weight loss, allowing your customers or residents to enjoy a more tender and "full" meal.
While it traditionally takes about 2 hours to cook an average of 3 kg chicken in a correctly adjusted combi oven with the appropriate moisture content, this time drops to about 45 minutes with a combi oven.
The climate control feature allows all kinds of products to be cooked at once (roasted vegetables, potatoes and meat together).

Fish
Steaming is the ideal method for cooking fish dishes. The steam generator means that the product will not dry out and break. Innovative technology means the oven knows exactly how much steam to inject for the food you're cooking.

Vegetable
You get fries that are crispy on the outside as in a conventional oven and juicy on the inside like in a steamer.
Since the environment of the oven cabinet can be adjusted according to what is being cooked, they can perfectly prepare all kinds of different dishes. Roasting, baking, boiling, etc. Combi oven for baking does it all in the most delicious way.
